For the Korma Sauce

  • 1 can 13.5 oz full-fat coconut milk
  • ½ cup raw cashews soaked in hot water for 30 minutes (or ½ cup ground almonds)

  • 2 tablespoons korma curry paste or homemade spice blend

Spices

  • 2 teaspoons garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon turmeric powder
  • ½ teaspoon cinnamon
  • ¼ teaspoon cayenne pepper optional, for heat
  • ¼ teaspoon red chili flakes adjust to taste

Finishing Touches

  • 2 tablespoons mango chutney
  • ¼ cup heavy cream or coconut cream optional for extra richness

Step 1: Prepare the Chicken
