Ingredients
  

  • 12 oz rotini or penne pasta
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • ¾ cup Kalamata olives pitted and sliced
  • ½ cup red onion thinly sliced
  • 1 cup feta cheese crumbled
  • ½ cup bell peppers chopped
  • ¼ cup fresh parsley chopped

Greek Dressing

  • cup olive oil
  • 3 tbsp red wine vinegar
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • ½ tsp salt
  • ½ tsp black pepper

Instructions
 

Cook the Pasta

  • First, pasta should be cooked in salted water until al dente. Then, it should be drained and rinsed under cold water to cool completely.

Prepare the Vegetables

  • Meanwhile, tomatoes, cucumber, onion, and peppers should be chopped into bite-sized pieces.

Make the Dressing

  • Next, olive oil, vinegar, lemon juice, and seasonings should be whisked together until well combined.

Assemble the Salad

  • After that, pasta, vegetables, olives, and feta should be placed in a large bowl.

Toss and Chill

  • Finally, dressing should be poured over the salad and gently mixed. It should be refrigerated for at least 1 hour before serving for best flavor.
