Ingredients
  

For the Salad:

  • 1 large head iceberg lettuce about 1 pound, chopped into bite-sized pieces
  • 1 medium head cauliflower about 1½ pounds, cut into small florets
  • 1 pound thick-cut bacon cooked until crispy and crumbled
  • ½ cup freshly grated Parmesan cheese or ¾ cup shredded

For the Creamy Dressing:

  • 1 cup Hellmann’s mayonnaise full-fat recommended
  • ¼ cup granulated sugar
  • 2 tablespoons white vinegar or apple cider vinegar
  • 1 tablespoon reserved bacon grease optional, for authentic flavor

Step 1: Prepare the Bacon

  • First, the bacon should be cooked in a large skillet over medium heat until it becomes perfectly crispy. Next, the cooked bacon needs to be transferred onto paper towels to drain excess grease. Then, once cooled, the bacon can be crumbled into bite-sized pieces. Importantly, if desired, one tablespoon of bacon grease should be reserved for the dressing.

Step 2: Prepare the Vegetables

  • Meanwhile, the iceberg lettuce must be washed, dried thoroughly, and chopped into bite-sized pieces. Subsequently, the cauliflower head should be cut into small, uniform florets. Additionally, smaller florets are preferred because they mix better throughout the salad and provide a more pleasant eating experience.

Step 3: Make the Dressing

  • In a medium bowl, the mayonnaise, sugar, and vinegar are whisked together until smooth. Furthermore, if using bacon grease, it should be added at this stage and mixed thoroughly. Notably, the dressing can be prepared up to 24 hours in advance and stored in the refrigerator, which actually allows the flavors to develop more fully.

Step 4: Assemble the Salad

  • In a large serving bowl, the chopped lettuce and cauliflower florets are combined first. Next, the crumbled bacon is added to the vegetable mixture. Then, just before serving, the prepared dressing is poured over the salad ingredients. Finally, the Parmesan cheese is sprinkled on top, and everything is tossed gently but thoroughly to ensure even coating.

Step 5: Serve Immediately

  • Critically, this salad must be served immediately after the dressing has been added. Otherwise, the lettuce will become soggy and the bacon will lose its delightful crispiness. Therefore, timing is essential for achieving the best texture and flavor.
